Pineapple Ginger Mojito

A pineapple infused twist on the mojito


Ingredients:

  • 2oz Ginger pineapple juice
  • 1-3/4oz Turnbull Bay Spiced Rum
  • 1/2 tbsp Fresh lime juice
  • 1/2 Lime sliced
  • 4 oz Club soda
  • Splash of soda
  • Mint leaves
  • Caramelized pineapple

Preparation:

Place 3 mint leaves in a glass and add lime juice and lime slices to the glass. Pour in the reduced pineapple-ginger juice and muddle everything together with a spoon. Fill halfway with ice and shake. Fill the glass two-thirds of the way with crushed ice, then pour over the spiced rum. Top with the club soda and mix again. Add more ice to fill glass if necessary. Garnish with a small sprig of mint and a slice of caramelized pineapple.

Ginger pineapple juice –
  • 1/4 cup pineapple juice
  • Large thumb-sized piece of ginger slices (no need to peel)
Place the pineapple juice and slices of ginger into a small saucepan. Bring to the boil, then simmer for 5-10 minutes until the liquid has reduced by half. Leave to cool to room temperature, then discard the ginger.
